Maple Glazed Salmon
Description
The recipe starts by seasoning salmon filets with salt and black pepper. A glaze is prepared by whisking together maple syrup, Dijon mustard, finely chopped jalapeño (with seeds removed), minced garlic, and paprika. This warm glaze is cooked briefly in a skillet before adding the salmon, placing it skin side down and spooning the glaze over the fish during cooking.
When the salmon is nearly done, pineapple chunks are spread evenly in the pan, and the skillet is moved under the broiler to finish cooking. This step caramelizes the glaze on the fish and softens the pineapple, while additional glaze can be spooned on during broiling for a thicker coating. The final result is salmon with a tender, flaky texture complemented by a richly flavored, slightly sweet, and mildly spicy sauce.
Serving the dish immediately preserves the glaze's shine and the salmon's moistness. Rice and broccoli are suggested accompaniments to balance the meal.
Ingredients
- 1 lb salmon skinned and cut into filets
- salt

- ½ cup pure maple syrup
- 2 Tablespoons Dijon mustard
- 2 Tablespoons jalapeño seeds removed, finely chopped
- 2 teaspoons garlic minced
- ¼ teaspoon paprika
- 1 cup pineapple chunks (fresh preferred)
Instructions
- Pat salmon with paper towels and season all over with salt and pepper. Set aside.
- Whisk together maple syrup, mustard, jalapeno, garlic, and paprika until well-combined.
- Set a 10” skillet over medium heat. Add syrup mixture and heat until warm, about 1-2 minutes.
- Add salmon, skinned side down, to pan. Use a spoon to ladle the maple sauce over the surface of the salmon periodically as it cooks.
- Once salmon is mostly cooked through (about 6 minutes), add pineapple to the pan in an even layer and transfer skillet to broiler.
- Broil until salmon is cooked through (salmon should flake easily with a fork). To create a better glaze coating, remove the skillet from the broiler after 1 or 2 minutes and ladle sauce over again before returning to oven.
- Serve immediately, we serve ours with rice and broccoli.
