Maple Roasted Acorn Squash Recipe
Description
This recipe prepares acorn squash cut into half-inch slices with seeds and pulp removed. The slices are seasoned with olive oil, maple syrup, brown sugar, kosher salt, and ground black pepper before roasting. Roasting at 400ºF allows the slices to cook through until tender and develop a slightly caramelized exterior without getting mushy.
The resulting flavor balances a subtle sweetness from maple syrup and brown sugar with the earthy, mild squash taste. The olive oil helps create a glossy, roasted texture on the squash surfaces. This simple roasting technique enhances the natural qualities of acorn squash while keeping the preparation quick and straightforward.
Serve this maple roasted acorn squash warm as a side for autumn or winter meals. It pairs well with roasted meats or as a vegetarian-friendly dish complementing grain bowls or salads. The recipe requires no advanced prep beyond slicing and seasoning, making it accessible even for beginner cooks.
