Maple Roasted Brussels Sprouts with Bacon

Maple Roasted Brussels Sprouts with Bacon combines crispy roasted Brussels sprouts with the rich flavor of thick-sliced bacon and a touch of pure maple syrup. The sprouts are halved or quartered, then tossed in rendered bacon fat and maple syrup before roasting to a caramelized, slightly sweet finish. The addition of salt and black pepper balances the sweetness and enhances the savory notes. This preparation results in tender yet crisp Brussels sprouts with a glossy coating from the maple syrup and bacon grease.

Description

This recipe for Maple Roasted Brussels Sprouts with Bacon starts by rendering thick-sliced bacon in the oven to provide a flavorful fat base. After removing the crispy bacon, halved or quartered Brussels sprouts are coated with bacon grease and maple syrup, then seasoned with kosher salt and black pepper. Roasting at 375°F promotes browning and caramelization, bringing out the natural sweetness of the sprouts enhanced by the maple syrup. The contrast of the smoky, savory bacon with the lightly sweetened sprouts creates a balanced side dish.

The texture features crispy outer leaves and tender insides, achieved by trimming tough leaves and roasting alone on a sheet pan to avoid overcrowding. The use of bacon grease instead of just oil adds depth of flavor and richness. A little olive oil can be added if there is insufficient bacon fat for coating.

This dish pairs well with roast meats or can be served as an elevated vegetable side for dinner. The maple syrup offers a gentle sweet note that brightens the earthy Brussels sprouts without overpowering them.

To ensure crispiness, dry the Brussels sprouts thoroughly before roasting and spread them evenly on the pan without crowding. The recipe can be doubled, but taking care not to overcrowd the sprouts allows for even roasting and good browning.

Ingredients

Servings
  • 2 lices thick-sliced bacon
  • 1 lb. Brussels sprouts trimmed, tough leaves removed, and halved or quartered depending on size
  • olive oil if needed, optional, or other oil of choice
  • 2 tablespoons pure maple syrup you can add 1 tablespoon more if you like things extra sweet
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Place the 2 slices thick-sliced bacon on a rimmed baking sheet. Place in the oven, and then preheat your oven to 375 degrees F, allowing the bacon to cook while the oven warms up. (This is a good time to prep your Brussels sprouts if you haven't already).
  2. Once the oven is at temperature, check the bacon - if it isn't crispy and done yet, leave it for another 5 minutes or so. Remove from oven once it's crispy and fat has rendered off, and place the bacon on a plate, leaving the bacon grease in the pan.
  3. Add the prepared halved or quartered 1 lb. Brussels sprouts to the baking sheet. You want there to be about 2 tablespoons of bacon grease. If there is less than that, drizzle a little olive oil on the sprouts to make up for the difference (don't worry too much about precise measurements here).
  4. Drizzle the 2 tablespoons pure maple syrup on the Brussels sprouts, and season with ½ teaspoon kosher salt and ¼ teaspoon black pepper. Toss to coat well, then spread out the sprouts on the baking sheet so they aren't touching each other. Bake at 375 degrees for about 25-30 minutes, tossing around 1-2 times during that time, until browned and thinner outer leaves have started to become crispy.
  5. While the Brussels sprouts roast, chop the cooked bacon into small pieces. When they are done roasting, add the chopped bacon and toss together. Serve.

Notes

  • Dry Brussels sprouts completely after washing to achieve crispier roasted results.
  • When doubling the recipe, avoid overcrowding the baking sheet to maintain even roasting and browning.
  • Use bacon fat for coating the sprouts; add olive oil only if there is less than two tablespoons of bacon grease.
