Maple Roasted Carrots

Maple Roasted Carrots deliver tender slices of carrot roasted until golden-brown with a coating of butter, avocado oil, and pure maple syrup for subtle sweetness. Topped with feta, dried cranberries, and toasted walnuts, this dish offers a balance of savory, sweet, and crunchy textures, making it a flavorful side or salad component.

Description

This recipe transforms simple carrots into a textured, flavorful accompaniment by roasting them at a high temperature to encourage caramelization. The carrots are sliced diagonally and coated with a blend of melted butter, avocado oil, pure maple syrup, and sea salt, which creates a glossy and slightly sweet surface that intensifies as they roast.

Once roasted to a golden-brown finish with tender interiors, the carrots are cooled before combining with crumbled feta cheese, dried cranberries, toasted walnuts, and fresh parsley. The feta adds a creamy, tangy note contrasting with the sweetness of the cranberries and maple, while the walnuts contribute a toasted crunch.

This dish serves well alongside roasted meats or as part of a composed salad. Its flavors and textures complement various meals, adding color and interest to the plate through balanced sweet and savory elements.

Leftovers keep well in the refrigerator up to one week when stored airtight, allowing for make-ahead preparation or enjoyment over several days.

Ingredients

Servings

Roasted Carrots:

  • 2 lbs carrot cut into ¼-inch diagonals, large
  • 2 Tbsp butter melted, unsalted
  • 1 Tbsp avocado oil
  • 2 Tbsp pure maple syrup
  • ½ tsp salt to taste, sea salt

For Serving:

  • ½ cup feta cheese crumbled
  • ¼ cup dried cranberries
  • ¼ cup walnuts toasted
  • 2 Tbsp parsley finely chopped, fresh

Instructions

  1. Preheat the oven to 420 degrees Fahrenheit and lightly spray a large baking sheet with cooking spray.
  2. Wash and scrub the carrots well to get any dirt off the outside.
  3. Use a sharp knife to cut the carrots into diagonal slices, about ¼-inch thick.
  4. Transfer the carrots to a large bowl along with the melted butter, avocado oil, pure maple syrup, and sea salt. Toss everything together until the carrots are well-coated.
  5. Pour the carrots onto the prepared baking sheet, including any excess liquid, and spread them into a single layer.
  6. Bake for 18 to 22 minutes, or until the carrots are golden-brown and have reached your desired level of doneness. Allow carrots to cool completely on the roasting pan before using a spatula to transfer them to a large serving bowl. Note: thinner sliced carrots will need about 15 minutes whereas thicker carrots will need closer to 20.
  7. Add the feta cheese, dried cranberries, walnuts and fresh parsley to the bowl with the carrots and toss to combine.
  8. Serve maple roasted carrots with your main dish and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to one week to maintain freshness.
  • Adjust roasting time based on carrot thickness; thinner slices may take closer to 15 minutes, while thicker ones need up to 20 minutes for desired tenderness.
