Maple Roasted Sweet Potatoes

Maple Roasted Sweet Potatoes are cubed and oven-roasted with olive oil, salt, and a sweet-spiced maple syrup and cinnamon glaze. The mixture is baked until the sweet potatoes are tender and caramelized with slightly crisp edges, garnished with candied pecans or walnuts. This side dish highlights natural sweetness enhanced by warm spices and crunchy nut topping.

Description

In this recipe, sweet potatoes cut into one-inch cubes are tossed in olive oil and kosher salt, spread evenly on a baking sheet to roast at a high temperature. After initial roasting, a mixture of pure maple syrup and ground cinnamon is drizzled over the potatoes, which are stirred to coat them evenly before returning to the oven. The final bake adds caramelization and crispness without over-softening the sweet potatoes.

The dish combines the natural starch sweetness and creamy interior of roasted sweet potatoes with a bright maple syrup sweetness and warming cinnamon spice. The optional candied nuts provide a contrasting crunchy texture and additional flavor depth. The potatoes can be served as a warm side dish complementing a variety of main courses.

This recipe allows the sweet potatoes to be roasted without peeling based on preference and calls for careful timing to achieve a balance between tenderness and caramelization. Checking at five minutes during the final roasting helps avoid overcooking.

Ingredients

Servings
  • 2 lbs sweet potato cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 2 tablespoons pure maple syrup
  • ½ teaspoon ground cinnamon
  • candied pecan for garnish, optional, or candied walnut, chopped

Instructions

  1. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper or foil. Grease with nonstick cooking spray.
  2. Place the sweet potatoes on the prepared baking sheet. Drizzle with olive oil and toss until well coated. Make sure the sweet potatoes are in a single layer, not touching. Sprinkle with salt.
  3. Place the pan in the oven and roast for 20 minutes.
  4. Meanwhile, stir together the pure maple syrup and cinnamon in a small bowl.
  5. Remove the pan from the and drizzle the maple cinnamon mixture over the sweet potatoes. Stir until sweet potatoes are well coated. Make sure the sweet potatoes are in an even layer on the pan.
  6. Return to oven and bake for 5 to 10 minutes, depending on how crispy you like your sweet potatoes. Stir halfway through to make sure they are cooked evenly. I recommend checking at 5 minutes to be safe.
  7. Remove the pan from the oven and place sweet potatoes in a serving bowl or on a platter. Garnish with candied pecans or walnuts, if using. Serve immediately.

Notes

  • You can peel the sweet potatoes before roasting if you prefer, but it is not required.
