Maple Roasted Sweet Potatoes
Description
The recipe uses large sweet potatoes peeled and cut into 3/4 inch cubes, ensuring even roasting and tender texture inside. The coating of maple syrup, brown sugar, cinnamon, and olive oil evenly dresses the potatoes, infusing them with sweet and warm spice notes. Roasting at 400°F allows the sugars to caramelize slightly on the edges while keeping the centers soft.
These sweet potatoes pair well with a variety of mains or can be enjoyed on their own as a side dish. The balance of sweetness and seasoning lends well to autumn or winter meals. You can adjust the level of salt to enhance the flavors to your preference.
If you use red or orange sweet potatoes, they tend to be sweeter and less fibrous, improving texture. Leaving the skin on is an option based on preference and can add nutrients and texture. Cutting pieces uniformly ensures even cooking. Leftovers keep well refrigerated for about three days.
Ingredients
- 2 large sweet potato
- 1/4 cup maple syrup
- 2 tablespoons brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons olive oil
- salt to taste
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil for easy clean up.
- Rinse, peel and cut the sweet potatoes into 3/4 inch cubes.
- In a small bowl, mix the maple syrup, brown sugar, cinnamon and olive oil.
- Spread the sweet potatoes in a single layer on the baking sheet and pour the maple syrup mixture over them. Season lightly with salt and toss to coat.
- Roast in the oven, for 30 to 40 minutes or until tender and the edges are lightly brown, turning them with a spatula once during the cooking process.
- Remove from the oven and season with salt to taste. Serve warm.
Notes
- Choose red or orange sweet potatoes for sweeter, creamier results with less fibrous texture.
- You can leave the skin on the sweet potatoes if preferred; it is edible and adds texture.
- Cut sweet potatoes into similar-sized cubes to ensure even roasting.
- Store leftover roasted sweet potatoes in an airtight container in the refrigerator for up to three days.
- Feel free to experiment with spices like cayenne pepper for additional heat.
