Maple Rosemary Grilled Chicken
Description
This recipe starts by combining maple syrup, soy sauce, olive oil, diced shallot, chopped fresh rosemary, lemon juice, Dijon mustard, and minced garlic, seasoned with salt and pepper. Chicken breasts are marinated in this mixture for at least 30 minutes, up to overnight, allowing the flavors to penetrate.

Ingredients
- ½ cup maple syrup
- ¼ cup soy sauce reduced sodium
- 3 tablespoons olive oil divided
- 1 shallot diced
- 2 tablespoons rosemary chopped, fresh
- 1 tablespoon lemon juice freshly squeezed
- 1 tablespoon Dijon mustard
- 3 cloves garlic minced
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 6 chicken breast boneless, skinless
- 2 prigs rosemary fresh
Instructions
- In a small bowl, combine maple syrup, soy sauce, 2 tablespoons olive oil, shallot, rosemary, lemon juice, Dijon and garlic; season with salt and pepper, to taste.
- In a gallon size Ziploc bag, combine maple syrup mixture and chicken; marinate for at least 30 minutes to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade.
- Preheat grill to medium high heat.
- Brush chicken with remaining 1 tablespoon olive oil; season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10 minutes.
- Serve immediately, garnished with rosemary, if desired.
