Maple Sriracha Devils on Horseback
Description
This recipe features Medjool dates slit open to remove pits and stuffed with crumbled blue cheese. Each date is then wrapped tightly with half slices of applewood smoked bacon secured by soaked toothpicks. A glaze made from pure maple syrup and Sriracha sauce is brushed onto the bacon-wrapped dates before baking.
Baking at 400°F crisps the bacon while gently warming the dates and melting the cheese inside, creating a combination of sweet, smoky, creamy, and spicy elements. The balance between rich blue cheese and smoky bacon is enhanced by the maple syrup’s sweetness and the Sriracha’s subtle heat, which can be adjusted according to preference.
These hors d'oeuvres are served warm or hot and offer a blend of textures from the tender dates and melted cheese to the crisp bacon exterior. The soaked toothpicks help hold everything together during cooking and serving, making them easy to enjoy at parties or as appetizers.
Ingredients
- 18 Medjool dates
- 1/2 cup blue cheese crumbled
- 9 lices Bacon (I use Applewood Smoked)
- 3 tablespoons pure maple syrup
- 2 teaspoons Sriracha sauce (more or less, to taste - see note)
Instructions
- Soak 18 plain wooden toothpicks in water for 20-30 minutes.
- Preheat oven to 400 degrees F with rack in middle position. Line a baking sheet with foil and place an oven-safe wire rack onto the pan.
- Using a paring knife, cut a lengthwise slit into each date to open (don't slice in half entirely). Remove and discard pits. Fill each date with 1/2 to 1 teaspoon crumbled blue cheese (depending on date size), pressing to stuff. Close dates and press edges together to seal.
- Cut each slice of bacon in half. Wrap dates in bacon, overlapping edges and securing with a soaked toothpick. Transfer to the wire rack.
- Stir together maple syrup and Sriracha and lightly brush each wrapped date with glaze. Bake 15 minutes. Remove from oven and brush with a second coating of glaze. Continue baking for 5-10 minutes, until bacon is crisp (depending on the thickness of your bacon). Serve hot or warm.
Notes
- You can customize the heat level by adjusting the amount of Sriracha in the maple glaze to suit your spice preference.
