Maple Syrup waffles!!!! The sweet, buttery, smokey maple syrup is infused into these waffles; they are sweet and totally delicious but to make things even better then there is bacon. Crispy wonderful bacon that is glazed with maple syrup. This is a salty sweet perfection of a breakfast!

Ingredients
For the Bacon
- 8 rashers of back bacon
- 2 tablespoon maple syrup
For the waffles
- 200 g plain flour
- 100 g wholemeal flour (see notes)
- 3 teaspoon baking powder
- 1 teaspoon baking soda
- 80 g salted butter
- 4 eggs
- 165 ml ⅔ cup maple syrup
- 165 ml ⅔ cup milk
- Extra maple syrup for serving

Instructions
- Pre-heat your oven to 180ºC/350ºF and get your waffle iron warming up.
- Cut the very thick rind from the bacon (if it has it) but leave a nice ring of fat.
- Line a baking sheet with cooking paper and arrange the bacon in a single layer.
- Cook the bacon for 15 minutes until just starting to crisp.
- Remove from the oven and use a pastry brush (the silicone ones are best) to brush maple syrup over your bacon.
- Cook for a further 5 minutes.
- To make the waffles, tip the flour, baking powder and baking soda into a large bowl. Set aside.
- Put the butter into a small pan and melt until it is on the verge of browning.
- Crack the eggs into a large jug (or another bowl) whisk gently to break the yolks then add in the maple syrup, milk and melted butter. Mix well.
- Pour the egg mixture into the bowl with the flour and stir until it is just combined. Don't over mix it, the batter should be a bit lumpy.
- Spoon the mixture into your waffle iron and cook for 4 minutes or until they are golden and lift easily away from the plates. If you have a traditional cast iron waffle iron, you may need to oil it first, the non-stick Belgium style ones should be fine without oil. Depending on your waffle iron you will make about 8 waffles. I find ½ cup of mixture just fills one waffle plate, but the smaller ones will need about ⅓ cup.
- Pile the bacon onto of your maple syrup waffles, drizzle with a little more maple syrup and enjoy!
Notes
- The wholemeal flour is optional. If you don't have it or don't want to use it then just use 100g extra plain flour.
