Maple Thyme Roasted Carrots

Roasted and caramelized in a maple herb glaze, these carrots are an easy side dish that's perfect for a holiday meal, or a simple family dinner!

Ingredients

Servings
  • 1 lb. baby carrots scrubbed and washed, or peeled, whole
  • 1/4 cup maple syrup
  • 2 Tbsp olive oil
  • 2 tsp thyme dried
  • 2 cloves garlic minced
  • 1 orange zested
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

To serve

  • almonds sliced
  • dried cranberries
  • thyme optional, for garnish, fresh

Instructions

Prepare

  1. Preheat oven to 400°F and get out a 2 quart or larger baking dish. If desired, line with parchment paper.

Make glaze/sauce

  1. To a large mixing bowl, add maple syrup, olive oil, thyme, garlic, orange zest, salt, and pepper. Whisk to combine well.

Combine

  1. Add carrots to the mixing bowl with the glaze/sauce, and toss to combine.

Bake

  1. Transfer carrots to the prepared baking dish and bake in preheated oven for 20-25 minutes, stirring once, halfway through the baking time.
  2. Exact baking time will depend on the size and shape of your carrots, so please take the baking time as an approximation and check the carrots for doneness (being golden brown and fork tender), at about 15 minutes and keep an eye on them.

Serve

  1. Top roasted carrots with almonds, cranberries, and fresh thyme if desired, and serve hot.
