Maple Toasted Muesli

Maple Toasted Muesli blends rolled oats with nuts, seeds, coconut flakes, and warm spices, all lightly coated in maple syrup and toasted until golden. This mixture offers a crunchy texture with a touch of natural sweetness, making it suitable for breakfast or a snack. The inclusion of dried fruits like craisins, golden raisins, and chopped dates adds chewy bursts of flavor once mixed in after toasting.

Description

Maple Toasted Muesli combines rolled oats, almonds, sunflower seeds, pumpkin seeds, and coconut flakes with cinnamon, ginger, nutmeg, and salt. These dry ingredients are tossed with maple syrup and vanilla before being evenly spread and toasted in the oven until fragrant and golden. The toasting process enhances the nuttiness and crispness of the mixture. After cooling, dried craisins, golden raisins, and chopped dates are added to introduce chewy, sweet contrasts. This muesli works as a crunchy breakfast cereal or snack, providing a mix of textures and subtle warm spice notes.

Ingredients

Servings
  • 2 1/4 cups rolled oats for gluten free use certified GF oats
  • 1/2 cup almonds sliced
  • 1/4 cup sunflower seeds without shells
  • 1/4 cup pumpkin seeds without shells
  • 1/4 cup coconut flakes unsweetened
  • Heaping 1/4 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1/4 cup maple syrup Grade B
  • 1 teaspoon vanilla
  • 1/4 cup craisins dried sweetened cranberries
  • 1/4 cup golden raisins
  • 1/4 cup dates pitted; chopped

Instructions

  1. Preheat oven to 375 degrees F. In a large mixing bowl combine oats, almonds, sunflower seeds, pumpkin seeds, coconut flakes, cinnamon, ginger, nutmeg and salt. Toss the dry ingredients together with a spoon until well mixed. Drizzle in the maple syrup and vanilla. Using clean hands, mix the dry ingredients with the wet until they are evenly coated with the maple syrup. Spread the mixture out onto a baking sheet in a thin, even layer.
  2. Toast the mixture for 12-15 minutes, stirring once every 4 minutes, until the oats are dry and fragrant and the nuts and coconut flakes begin turning golden. The mixture on the outer edges of the pan will toast faster than the mixture in the middle of the pan, so be sure to stir from the outer edges inward so that everything cooks evenly. While muesli is toasting, clean out your mixing bowl and dry it, you'll need it again soon.
  3. Remove the pan from the oven and let the mixture cool on the hot pan slowly to room temperature. Pour into the large mixing bowl and stir in the dried fruits. Scoop the muesli into a quart-sized mason jar or a plastic zipper bag and seal. Eat within 1 month and keep sealed in an airtight container when not in use for best flavor.
