  • 4 salmon filets

Walnut Crust

  • ½ cup walnut pieces
  • ¼ cup Italian parsley fresh
  • 2 Tablespoon breadcrumbs gluten free
  • 2 cloves garlic
  • 1 teaspoon paprika
  • ½ teaspoon black pepper cracked
  • ½ teaspoon salt

Glaze

  • 4 Tablespoon ghee or butter, unsalted
  • ¼ cup maple syrup
  • 1 Tablespoon coconut aminos
  • teaspoon ground ginger
  • 1 clove garlic minced
  • lemon juice of 1
  • 2 teaspoon arrowroot powder

Instructions

  1. Preheat oven to 400 F. Season salmon with salt and freshly ground black pepper.
  2. Add the walnut crust ingredients in a food processor and process until mixture is finely chopped. Dredge each salmon filet with walnut mixture.
  3. Add the glaze ingredients to a small sauce pan and heat over medium heat. Bring to a boil; reduce heat to low and simmer until slightly thickened. Pour one half of the glaze over the walnut crusted salmon filets and reserve the other half to serve immediately before serving.
  4. Bake salmon at 400 F for 15 minutes.
