Marinara Sauce

Marinara Sauce here is made from whole canned San Marzano tomatoes crushed by hand, simmered in olive oil with garlic, dried oregano, basil, sugar, and salt. Cooking reduces the sauce to a rich orange oil surface and a balanced tomato base, perfect for pasta or pizzas.

Description

This Marinara Sauce recipe focuses on a straightforward, flavorful tomato sauce using canned San Marzano whole peeled tomatoes crushed manually to retain texture. Garlic sautéed briefly in extra virgin olive oil infuses the oil with aroma before adding crushed tomatoes and dried herbs—oregano and basil. A pinch of sugar balances the acidity, and salt seasons the sauce.

The sauce simmers uncovered for 15 to 20 minutes, allowing it to thicken and develop deeper flavor. The olive oil rises to a noticeable deep orange color on the surface, indicating a well-cooked marinara with a smooth yet slightly textured consistency.

This sauce is versatile for a variety of dishes requiring tomato sauce, including pasta, pizza, or as a base for other recipes. It yields about 3 cups of sauce.

A substitution tip suggests using 6 to 7 ripe fresh tomatoes, blanched and peeled, in place of canned tomatoes to produce a similar result if fresh produce is preferred.
