Marinara Soup

A comforting bowl of marinara soup comes together in only 20 minutes for a quick and easy vegetarian dinner.

Ingredients

  • 3 tablespoons olive oil
  • 2 carrot peeled and chopped
  • 1 onion chopped, small
  • 1 clove garlic minced
  • 1 marinara sauce 24 ounce jar
  • 4 cups chicken broth or vegetable broth
  • 1 cannellini beans 15 ounce can, drained and rinsed
  • ½ cup small pasta I used mini wagon wheels, but something like elbow macaroni would also work well, uncooked
  • ½ teaspoon salt
  • 1/4 teaspoon black pepper
  • red pepper flakes to taste (optional, crushed

Instructions

  1. Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and sauté until soft (about 2-3 minutes).
  2. Add the jar of marinara sauce, chicken broth, beans, uncooked pasta, salt, pepper, and red pepper flakes.
  3. Simmer, uncovered, for 10 minutes. Ladle into bowls and serve.
