Marinated Cherry Tomatoes Recipe
Description
This recipe uses ripe cherry tomatoes cut in half and marinated with finely chopped parsley, minced garlic, and a light Italian dressing. The flavors meld as the tomatoes sit covered at room temperature or chilled, allowing the acidity from the dressing and the herbal notes of parsley to infuse the tomatoes. The garlic adds a pungent sharpness that complements the tomato’s natural sweetness.
The marinated tomatoes provide a crisp yet juicy texture with a tangy and savory taste. The recipe notes that any variety or color of baby tomatoes can be used, increasing flexibility. It advises against creamy Italian dressings to keep the texture and flavor profiles appropriate.
This preparation works well as a salad accompaniment or a topping for grilled meats or breads. Marinating for a few hours or overnight enhances flavor depth, making it a convenient make-ahead option.
