Marinated Portobello Burgers with Creamy Pesto Sauce

These are the ultimate Portobello Burgers! Tender portobello mushrooms are marinated, cooked to perfection, and topped with a homemade creamy pesto sauce. Yum.

Ingredients

  • 4 portobello mushroom large
  • 4 hamburger rolls vegan brand if desired
  • 2 onion
  • 1 tomato large
  • 2 tbsp olive oil

To marinate the portobellos

  • 1 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce vegan brand if desired
  • ½ tbsp olive oil
  • ½ tsp garlic powder
  • 1 tsp smoked paprika
  • ¼ tsp salt

Pesto Mayonnaise

  • cup mayonnaise use vegan mayo or dairy free yogurt for a vegan version
  • cup pecan or walnuts or pine nuts
  • 1 cup basil packed, fresh leaves
  • 1 tbsp nutritional yeast
  • 2 garlic minced, cloves
  • ¼ tsp salt
  • 2 tbsp olive oil

Instructions

  1. Remove portobellos stalks. Mix all the ingredients to marinate the portobellos. Using a cooking brush, toss them with the sauce on both sides. Let them marinate for 30 minutes, with the cap side down.
  2. Chop onions in thin slices. Place them in a large skillet with 2 tbsp of olive oil, cook them at medium heat until golden brown.
  3. The onions will need between 25-30 to be caramelized. Stir it regularly; otherwise, it will burn.
  4. Combine all ingredients for the pesto mayonnaise in a blender. Use either a stick blender or a regular blender.
  5. Blend all the ingredients.
  6. Blend until you have a smooth, creamy paste. Adjust salt to taste.
  7. Cook the portobellos cap side down in a heated skillet, grill or BBQ until tender. It will take 8-10 minutes.
  8. To make the burgers, first add pesto mayonnaise to the bread.
  9. Next, add caramelized onions.
  10. Add a juicy portobello.
  11. Top with a slice of tomato and cover with bread. Enjoy!

Notes

  • Portobellos are my favorite choice when going to BBQs or inviting friends over. They are extremely delicious, juicy and adaptable to any kind of add-on that you can think of. Just get creative by adding different seasonings, vegetables or even some melted cheese.
