Description
This recipe starts with thinly sliced and peeled beets roasted at high heat until tender and caramelized on the edges. The roasting intensifies their natural sweetness and softens the texture while retaining some firmness. During roasting, the beets are flipped midway to ensure even cooking.
The dressing combines minced garlic, honey, and a choice of vinegars—commonly Chinese black vinegar—to provide a sweet, tangy, and slightly acidic contrast to the earthy beets. Extra virgin olive oil rounds out the dressing with a smooth mouthfeel. Salt and pepper season it further.
After roasting, the beets are tossed thoroughly in the dressing to coat all pieces, allowing the flavors to meld. Optional fresh herbs like cilantro or parsley introduce a fresh green note. This dish complements meals needing a flavorful vegetable side or can be served slightly chilled as part of a salad spread.
Ingredients
- 1 1/2 pounds beet 680g, peeled and cut into ¼-inch thick circles or half moons
- extra virgin olive oil
- 1-3 cloves garlic (minced)
- 1 teaspoon honey
- 1 tablespoon Chinese black vinegar (can substitute red wine vinegar, pomegranate vinegar, balsamic, or apple cider vinegar)
- salt
- black pepper
- fresh herbs (for garnish; optional)
Instructions
- Preheat the oven to 400 degrees F/200 degrees C. Place the beets on a baking sheet lined with parchment paper, and drizzle with olive oil.
- Roast the beets for 25 minutes. Take them out of the oven and flip them, and return to the oven to roast for an additional 20 minutes.
- Meanwhile, make the dressing. Combine 2 tablespoons extra virgin olive oil, minced garlic, 1 teaspoon honey, 1 tablespoon vinegar, and salt and pepper to taste.
- Toss the beets in the dressing and serve. Garnish with fresh herbs (cilantro, scallions, and parsley all work great) if desired and serve.
