Marinated Tomato and Cucumber Salad

This healthy Marinated Tomato and Cucumber Salad is super easy to make and so full of flavor!

Ingredients

Servings
  • 2-3 tomato or 1-1 ½ pounds roma or campari tomatoes, large ripe
  • 1 English cucumber
  • ½ red onion
  • ¼ cup extra virgin olive oil
  • 2 TBSP red wine vinegar
  • 2 cloves garlic (fresh garlic tastes best here)
  • ½-¾ tsp Italian seasoning blend
  • salt to taste
  • black pepper to taste
  • 1-2 handfuls kale for an optional leafy green base, or arugula, fresh

TASTY OPTIONAL EXTRAS

  • basil fresh herbs
  • dill
  • parsley
  • mint
  • lemon juice juice of ½-1 lemon
  • feta cheese for non-vegans, or burrata or mozzarella cheese

Instructions

  1. Dice large tomatoes or cut smaller tomatoes into wedges.
  2. Leave cucumber unpeeled and cut in half lengthwise. Slice.
  3. Peel and thinly slice onion. Add anywhere from ¼-½ the red onion, to taste.
  4. Peel fresh garlic. Use a garlic press or smash garlic onto a cutting board and mince.
  5. In a large wide and shallow bowl combine olive oil, vinegar, garlic, and italian seasoning. Start with ¼ tsp each of salt and pepper and then add more at the end to taste, to further bring out the flavors.
  6. Additional extras like fresh herbs and lemon juice can be added here as well.
  7. Whisk together ingredients and add the tomato, cucumber, and onion. Stir well to coat and allow to sit out for 30 minutes to marinate (at room temp) - stirring occasionally to coat all the vegetables. This can be done for up to an hour and the flavors will amplify even further.
  8. Taste and add any additional salt and pepper desired to enhance the flavors to your liking. Serve over greens such as kale or arugula and add any optional extras your heart desires! Enjoy!
