Marinated tomatoes with whipped ricotta

Marinated tomatoes are the perfect recipe to celebrate seasonal cherry tomatoes. The perfect appetizer served with whipped ricotta and toast.

Ingredients

Servings
  • 400 g (14oz) cherry tomato
  • ½ cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 4 garlic thinly sliced, cloves
  • 1 red chili pepper halved
  • tsp salt
  • ½ tsp black pepper

For the whipped ricotta

  • 250 g (½lb) ricotta cheese
  • 3 tbsp fresh herbs basil, chives. etc.
  • 1 tsp lemon juice
  • salt to taste
  • black pepper to taste

To serve

  • bread toasted, if preferred, crusty

Instructions

  1. Score cherry tomatoes by making a cross cut into the bottom of each tomato.
  2. Add the tomatoes to a large, heat-proof bowl then pour over boiling water.
  3. Allow to stand for a few minutes then drain the tomatoes and plunge into ice water.
  4. Blanching the tomatoes will allow the skins to slip right off.
  5. Add the peeled tomatoes to a large jar.
  6. To make the marinade, whisk the extra virgin olive oil, vinegar, lemon juice, chilli, sliced garlic, salt and pepper together then pour over the tomatoes.
  7. Top up with more olive oil if necessary.
  8. Allow the tomatoes to marinade for at least 6 hours but ideally overnight.
  9. Make the herb whipped ricotta by blending the ricotta cheese, herbs, lemon juice, salt and pepper together in a food processor.
  10. Serve the tomatoes and ricotta on crusty toast for the perfect summer appetizer or light lunch.
