Ingredients

  • olive oil
  • onion chopped
  • garlic 2 cloves, minced

  • celery sliced, 2 stalks
  • chicken breast boneless, skinless, cut into bite-sized pieces
  • chicken broth 4 cups
  • heavy cream
  • peas frozen, 1 cup
  • thyme dried; 1 teaspoon
  • dried rosemary
  • salt to taste
  • black pepper to taste
  • parsley fresh, chopped, for garnish
  • bread crusty, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  2. Add the chicken pieces to the pot and cook until they are no longer pink, about 5 minutes.
