  • 2 salmon fillet 6-8 ounce, skin on or off
  • 1 tablespoon olive oil
  • ¼ cup sun-dried tomatoes oil-packed, drained and roughly chopped
  • 2 cloves garlic minced
  • ½ cup heavy cream
  • ¼ cup chicken broth or white wine
  • ¼ cup Parmesan Cheese plus more for serving, grated
  • 1 tablespoon parsley chopped, fresh
  • ½ teaspoon italian herb blend or a mix of oregano, basil, and thyme, dried
  • salt to taste
  • black pepper to taste
  • red pepper flakes optional, for a little heat

Instructions

  1. Prepare salmon: Pat the salmon fillets dry with paper towels. Season them with salt and pepper.
  2. Sear salmon: Heat the olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down (if using skin-on fillets) in the skillet and sear for 3-4 minutes, until the skin is crispy and the salmon is browned. Flip the fillets and sear for another 2-3 minutes, or until cooked through. The internal temperature should reach 145°F (63°C). Remove the salmon from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the chopped sun-dried tomatoes and minced garlic. Cook for 1 minute, until fragrant. Pour in the heavy cream and chicken broth (or white wine). Bring to a simmer and cook for 5-7 minutes, until the sauce has thickened slightly.
  4. Add Parmesan and herbs: Stir in the Parmesan cheese, parsley, Italian herbs, and red pepper flakes (if using). Season with salt and pepper to taste.
  5. Return salmon to skillet: Return the salmon fillets to the skillet and coat them with the sauce.
  6. Serve: Serve the Marry Me Salmon immediately, spooning the sauce over the salmon. Garnish with additional Parmesan cheese and fresh parsley, if desired.

  • Salmon: Use fresh or frozen salmon fillets. If using frozen salmon, thaw them completely before cooking.
