Marshmallow Fruit Salad (Ambrosia Salad)

Marshmallow Fruit Salad, also known as Ambrosia Salad, is a creamy mixture of mini marshmallows, shredded coconut, assorted fruits like mandarin oranges, pineapple tidbits, maraschino cherries, and chopped nuts all combined in a whipped blend of heavy cream, powdered sugar, vanilla, and sour cream. The result is a sweet, fluffy fruit salad with a richness from the cream and texture from the nuts and marshmallows.

Description

This Ambrosia Salad combines a whipped mixture of heavy cream, powdered sugar, vanilla, and sour cream to create a smooth, sweet base. This creamy blend coats a mix of mini marshmallows, shredded sweetened coconut, and well-drained canned fruits including mandarin oranges, pineapple tidbits, and maraschino cherries. Chopped nuts add a crunchy texture to contrast the softness of the cream and fruits.

The fruits are drained thoroughly ahead of time to prevent the salad from becoming watery as it sits, maintaining a pleasant texture. The heavy cream is whipped to stiff peaks before folding in the sour cream and fruit mixture, ensuring the salad remains light and fluffy.

This dish is commonly served chilled and makes a festive side or dessert that offers a combination of creamy sweetness with fruity and nutty bites. It benefits from some refrigeration time to let the flavors meld and the salad to chill before serving.

Ingredients

Servings
  • 3/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • ½ cup sour cream
  • 4 cups mini marshmallows
  • 1 ½ cups coconut sweetened shredded
  • 1 can mandarin orange
  • 1/2 cup nuts
  • 3/4 cup maraschino cherries
  • 1 cup pineapple tidbits

Instructions

  1. If you plan to prepare this salad in advance, it's essential to thoroughly drain the fruit to prevent the salad from becoming too watery. You can place all the fruit in a colander and let it drain and dry for about an hour before using. This step will help maintain the salad's desired consistency as it sits.
  2. In a medium-sized bowl mix the heavy cream together with the powdered sugar and vanilla extract on high speed until stiff peaks form.
  3. Stir in the sour cream until it becomes homogenous.
  4. Next, in a large bowl toss together the mini marshmallows and coconut with your well-drained pineapple, maraschino cherries and oranges.
  5. Chop the nuts, ensuring they remain in small, bite-sized pieces. These nuts can include a variety, such as walnuts, almonds, and pecans, which are also added to the bowl.
  6. Pour the whipped cream mixture over, stirring everything together until well-combined and all the ingredients are coated in the cream.
  7. Cover the bowl and leave in the fridge to chill for at least 1 hour before serving.

Enjoy!
