Mashed Cauliflower
Description
This dish starts with steaming cauliflower florets until very tender, ensuring minimal water retention by draining and patting dry. The steamed cauliflower is processed with milk, plain Greek yogurt (or sour cream), butter, salt, and pepper until smooth, creating a rich and creamy mash that maintains a mild cauliflower flavor without being watery or grainy.
The addition of yogurt adds slight tang and creaminess, while butter enriches the mouthfeel. Chopped fresh chives sprinkled on top lend color and a gentle sharpness. This side pairs well with many main courses and can be served warm.
You can customize this dish by adding favorite potato toppings such as extra butter, paprika, shredded cheese, or bacon for varied flavors and textures.
Ingredients
- 1 head cauliflower cut into florets
- ¼ cup milk
- ¼ cup yogurt or sour cream, plain, Greek
- 2 tablespoons butter unsalted
- ½ teaspoon salt
- ¼ teaspoon black pepper
- chive chopped, for garnish, fresh
Instructions
- Place the cauliflower florets in a steamer basket in a pot with water. Cover the pot, bring the water to a boil, and steam the cauliflower for 10-15 minutes until very tender.
- Drain the cauliflower and pat it dry. You want to remove as much excess moisture as possible so the finished dish isn't watery.
- Transfer the steamed cauliflower to a food processor. Add milk, Greek yogurt, butter, salt, and pepper to the bowl. Cover and process until smooth, scraping the sides as needed.
- Taste the cauliflower and add salt, pepper, or more butter as desired. Serve warm with a little extra butter and chopped chives on top.
Notes
- Enhance flavor by adding toppings like extra butter, shredded cheese, paprika, or cooked bacon.
- Ensure cauliflower is well drained and patted dry to avoid a watery mash.
- Use plain Greek yogurt or sour cream to add creaminess and slight tang.
- Serve warm with a garnish of fresh chopped chives to provide color and mild onion flavor.
