Mashed Cauliflower

This mashed cauliflower recipe blends steamed florets and garlic into a creamy purée with buttermilk and butter, seasoned simply with salt and pepper. The texture is smooth yet slightly textured, a lighter alternative to traditional mashed potatoes. It’s practical for those seeking a vegetable-based side that pairs easily with many meals.

Description

Mashed Cauliflower provides a creamy side dish made by steaming or boiling cauliflower and crushed garlic until tender, then blending with buttermilk and butter. The gentle seasoning of salt and pepper enhances the mellow flavor of cauliflower. This preparation results in a purée with a smooth texture, achieved using an immersion blender or regular blender, making it suitable as a low-carb substitute or vegetable side dish.

The garlic adds subtle fragrance while the buttermilk contributes a slight tang and moisture, balancing the richness of butter. The simple combination creates a familiar creamy feel but with the lighter profile of cauliflower, making it adaptable to various meals.

This side can complement meats, fish, or vegetarian mains, lending a creamy texture without the heaviness of potatoes. The recipe suggests using an immersion blender for ease, though a regular blender is equally effective to achieve smoothness.

Ingredients

Servings
  • 1 cauliflower cut up into florets, medium head
  • 4 cloves garlic crushed
  • 1/3 cup buttermilk 1% fat
  • salt to taste
  • black pepper to taste
  • 1 tbsp butter plus optional more for serving, salted

Instructions

  1. Steam or boil cauliflower and garlic until soft.
  2. Drain the cauliflower, then add buttermilk, butter, salt, pepper and purée with an immersion blender. (If you don't own a hand blender, you should consider getting one. It is one of my most used gadgets in my kitchen, you'll wonder how you ever lived without it!) A regular blender would work fine as well.
