Ingredients

  • 1 large cauliflower 2-2 ¼ pounds, head
  • 1 cup broth chicken or vegetable, low sodium
  • 3 Tablespoons milk anything but skim
  • 3 Tablespoons cream cheese reduced-fat or nonfat
  • ¼ teaspoon garlic salt
  • black pepper to taste, freshly ground
  • salt to taste
  • chives optional, freshly chopped, or parsley

Instructions

  1. Separate the cauliflower into florets and finely chop the core.
  2. In a pot, bring broth to a simmer over high heat. Add the cauliflower, cover, and reduce heat to medium.
  3. Cook for 12-15 minutes until the cauliflower is very tender.
  4. Drain and discard the liquid (the drier the cauliflower, the better!).
  5. Transfer drained cauliflower to a food processor or large bowl.
  6. Add milk, cream cheese, and garlic salt.
  7. Process or mash with a potato masher until you reach your desired consistency.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh herbs if desired, and serve!
