Mashed Cauliflower Recipe

Mashed Cauliflower combines steamed cauliflower florets pureed with sautéed garlic, Parmesan, and cream cheese to create a creamy and smooth side dish. Olive oil and half and half add richness, while garlic salt and black pepper season the mash. The texture is soft and fluffy with a mild savory flavor, making this a lower-carb alternative to traditional mashed potatoes with a fresh parsley garnish to finish.

Description

This recipe begins by steaming cauliflower florets until tender, then mixing them with garlic gently cooked in olive oil. Parmesan cheese and cream cheese contribute to a creamy, cheesy flavor, while garlic salt and black pepper season the dish. Pureeing with half and half gives a smooth, spoonable texture akin to mashed potatoes but lighter. The addition of fresh parsley and butter as garnishes adds subtle herbal notes and extra richness.

Mashed Cauliflower works well as a side dish that can accompany a variety of main courses, providing a mild and creamy vegetable option. It can be reheated gently on the stove as needed. The recipe emphasizes countertop steaming and mixing to maintain a fresh and smooth consistency without heaviness.
