Mashed Cauliflower With Parmesan and Chives

Mashed Cauliflower With Parmesan and Chives offers a smooth, creamy vegetable side using tender cauliflower pureed with chicken broth, Parmesan cheese, and fresh chives. The seasoning with salt and pepper rounds out a rich and delicate flavor profile. This dish is a low-carb alternative that is tender and flavorful, suitable alongside various entrees.

Description

The recipe begins by boiling cauliflower florets in chicken broth until just tender, ensuring a soft texture without being mushy. The cooked cauliflower is then puréed to a silky smooth consistency in a food processor, creating a creamy base without added dairy. Parmesan cheese adds a subtle umami richness, while chopped fresh chives contribute a mild onion note and color contrast. Seasoning with kosher salt and freshly ground black pepper completes the dish.

This mashed cauliflower serves well as a comforting side dish, particularly paired with meats or roasted vegetables. Its light texture and flavorful accents make it a versatile addition to many meals.
