Mashed Potato Cups

Mashed Potato Cups are individual portions of creamy, cheese-studded mashed potatoes blended with scallions and crumbled bacon, baked until golden in muffin tins. The exterior edges develop a slight crispness while the insides stay soft and cheesy. These savory cups make a handy side dish or appetizer with a balanced salty and smoky profile.

Description

These Mashed Potato Cups start by combining cold mashed potatoes with beaten eggs, most of the grated cheddar cheese, chopped scallions, and crumbled cooked bacon. Seasoned with fine sea salt and white pepper, the mixture is spooned into lightly sprayed muffin tins for uniform portioning. Baking at 400°F for 20 minutes cooks the eggs through and sets the potato cups, which are then topped with remaining cheddar and briefly returned to the oven to melt the cheese.

The result is a bite-sized golden brown cup featuring a tender, creamy center rich with sharp cheddar, smoky bacon bits, and fresh scallion flavor. These pop out of the tins easily and can be served immediately as a side or party snack.
