Mashed Potato Cups
Description
These Mashed Potato Cups start by combining cold mashed potatoes with beaten eggs, most of the grated cheddar cheese, chopped scallions, and crumbled cooked bacon. Seasoned with fine sea salt and white pepper, the mixture is spooned into lightly sprayed muffin tins for uniform portioning. Baking at 400°F for 20 minutes cooks the eggs through and sets the potato cups, which are then topped with remaining cheddar and briefly returned to the oven to melt the cheese.
The result is a bite-sized golden brown cup featuring a tender, creamy center rich with sharp cheddar, smoky bacon bits, and fresh scallion flavor. These pop out of the tins easily and can be served immediately as a side or party snack.
Ingredients
- 2 cups potato cold, mashed
- 2 egg room temperature and beaten
- 1 cup cheddar cheese , grated and divided
- 1 scallion whites with a little bit of greens, chopped, bunch
- 5 lices Bacon cooked and crumbled, center cut
- 1/4 teaspoon salt fine sea salt
- 1/4 teaspoon white pepper
- cooking spray
Instructions
- Preheat the oven to 400°F. Lightly coat a muffin tin with the cooking spray.
- In a large mixing bowl, blend together the mashed potatoes, eggs, 3/4 cup of the cheddar cheese, scallions, crumbled bacon, fine sea salt and white pepper.
- Spoon into the muffin tins. Bake for 20 minutes. Remove, evenly top the Mashed Potato Cups with the remaining 1/4 cup of cheddar cheese. Return to the oven for 2-3 minutes or until the cheese has melted.
- Remove and serve immediately. Mashed Potato Cups should pop out of muffin tins easily with a fork.
