MASHED POTATOES WITH A SECRET

This mashed potato recipe uses Yukon Gold potatoes cooked until tender, then mashed with warmed milk and butter that has been browned to add a nutty complexity. The browned butter acts as a flavor secret, giving the potatoes richer aroma and taste compared to plain mashed potatoes. The finished dish is smooth and creamy with an enhanced buttery flavor and a delicate nutty note.

Description

MASHED POTATOES WITH A SECRET begins by boiling peeled and quartered Yukon Gold potatoes in salted water until fully cooked. Meanwhile, butter is melted and browned slowly over medium-low heat in a saucepan, developing small brown flecks and a nutty aroma. Milk is warmed separately to avoid cooling the potatoes when combined. After draining the potatoes, they are mashed thoroughly with the warmed milk and the aromatic browned butter to create a smooth, creamy texture with enhanced flavor.

The browned butter adds depth and richness uncommon in ordinary mashed potatoes, elevating the dish to a subtle, savory treat. Yukon Gold potatoes provide a creamy texture naturally, making them especially suitable for this preparation.

This mashed potato recipe pairs well with roasted meats and vegetables due to its smooth texture and rich flavor profile. The browned butter garnish adds a visual and flavorful finishing touch.

Ingredients

Servings
  • 2 lbs Yukon Gold potatoes peeled and quartered
  • 4 tbsp butter
  • ½ cup milk
  • salt

Instructions

  1. Place potatoes in a large pot. Add plenty of clean water and bring to a boil. Add some salt and keep boiling for about 20 minutes or until potatoes are cooked through.
  2. While the potatoes are cooking, it's time to brown the butter. In a small saucepan (preferably white or silver colored so you can watch the butter brown), melt the butter on medium-low heat. Keep cooking the butter until tiny brown pieces start to form on the bottom of the pan. Remove the butter from the heat immediately.
  3. Warm up the milk on the stove top or in the microwave.
  4. Drain the potatoes and pour the milk and the butter on top. Using the potato masher, work on the mixture until it looks smooth and no lumps remain.
  5. Garnish with some browned butter.
