  • 4 pounds potato cut into 2-3 inch pieces, red
  • 1/2 cup butter I use salted butter
  • 1 tablespoon garlic minced
  • 1 1/2 cups heavy cream warmed
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley chopped

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the potatoes and cook for 20 minutes or until tender.
  3. Drain the potatoes.
  4. In the potato pot, melt the butter over medium heat. Add the garlic and cook for 45 seconds, stirring continuously. Stir in the cream.
  5. Return the potatoes to the pot.
  6. Mash the potatoes until they're creamy and mostly. Stir in the salt and pepper. Sprinkle with parsley, then serve immediately.

Notes

  • A potato masher is best for mashing; for super smooth texture, peel potatoes and use a ricer or hand mixer.
