Description
Red potatoes are cut evenly and boiled in salted water until tender, ensuring consistent texture. The cooked potatoes return to the pot and are mashed until creamy but not completely smooth, preserving some texture. Salt, pepper, and chopped parsley are added for seasoning and a fresh, herbal finish.
The result is a creamy, buttery mashed potato with subtle garlic intrigue and a pleasant color contrast from the parsley. This side complements roasts, grilled meats, and other hearty entrées, providing warmth and comfort.

Ingredients
- 4 pounds potato cut into 2-3 inch pieces, red
- 1/2 cup butter I use salted butter
- 1 tablespoon garlic minced
- 1 1/2 cups heavy cream warmed
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons parsley chopped
Instructions
- Bring a large pot of salted water to a boil.
- Add the potatoes and cook for 20 minutes or until tender.
- Drain the potatoes.
- In the potato pot, melt the butter over medium heat. Add the garlic and cook for 45 seconds, stirring continuously. Stir in the cream.
- Return the potatoes to the pot.
- Mash the potatoes until they're creamy and mostly. Stir in the salt and pepper. Sprinkle with parsley, then serve immediately.
Notes
- A potato masher is best for mashing; for super smooth texture, peel potatoes and use a ricer or hand mixer.
- Avoid food processors to prevent gluey mashed potatoes.
