Mashed Red Potatoes
Description
Mashed Red Potatoes start with quartered red potatoes and minced garlic boiled until tender. After draining, the potatoes are mashed with butter and warmed half and half to achieve a creamy, smooth texture. Garlic salt and black pepper season the potatoes thoroughly, and shredded Parmesan cheese provides a savory, salty depth. Fresh parsley scattered on top adds color and a light herbal freshness. This side dish pairs well with many main courses, offering a rich, garlicky flavor and a comfortable, creamy mouthfeel.
The method is straightforward: boil until potatoes yield easily to a fork, then mash and blend with warm dairy ingredients to avoid chilling and firming the mash. The flavoring is simple but effective, relying on garlic and Parmesan rather than additional herbs or spices.
According to the notes, these mashed potatoes can be prepared up to 24 hours in advance if refrigerated covered and reheated slowly, adding a splash of milk to keep them creamy. Leftovers maintain quality refrigerated for 2-3 days.
Ingredients
- 8 medium red potatoes quartered
- 2 teaspoons garlic minced
- 4 tablespoons butter
- ¾ - 1 cup half and half warmed
- 1 - 2 teaspoons garlic salt with parsley flakes
- ½ teaspoon black pepper
- ¼ cup Parmesan Cheese shredded
- parsley optional, fresh
Instructions
- Place potatoes and garlic in a large pot and cover with water.
- Bring to a boil. Reduce heat, cover, and simmer for about 20 minutes (or until potatoes are tender).
- Drain potatoes and place them back in a pot.
- Add butter, half and half, garlic salt, and pepper. Use a potato masher to mash potatoes until desired consistency and combine ingredients until they are the preferred consistency.
- Stir in cheese and top with fresh parsley. ENJOY!
Notes
- You can make the mashed potatoes up to 24 hours ahead and store them covered in the refrigerator before reheating.
- Store leftovers in an airtight container in the fridge for 2-3 days.
- When reheating, do so slowly and add a little milk to prevent the potatoes from drying out.
