Mashed Sweet Potato Recipe

This Mashed Sweet Potato Recipe creates a smooth, creamy side dish with subtle sweetness enhanced by orange juice and brown sugar. Baking the sweet potatoes before mashing develops their flavor and results in tender flesh that's easy to blend. The addition of half-and-half infused with bay leaves adds richness and a gentle herbal note.

Description

The recipe begins by baking whole sweet potatoes until fork tender, ensuring a soft interior with a concentrated natural sweetness. Meanwhile, half-and-half is gently simmered with bay leaves to infuse subtle flavor before being added to the mashed potatoes. After peeling and removing the cooked sweet potato flesh, it is pureed with the infused half-and-half, orange juice, brown sugar, and kosher salt until light and smooth.

The finished mashed sweet potatoes offer a balanced sweetness and creamy texture, suitable for traditional holiday meals or everyday sides. Suggested garnishes include sour cream, butter, and scallions to add richness and a mild savory contrast.

For a variation, adding crushed red pepper flakes and cooked chorizo provides a spicy and savory twist. The recipe recommends serving immediately to enjoy the optimal texture but can be adjusted with toppings as desired.

Ingredients

Servings
  • 4 sweet potato large
  • 2 cups half-and-half or cream
  • 2 bay leaf
  • 2 tablespoons orange juice
  • 2 tablespoons brown sugar
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F. Scrub and clean the sweet potatoes. Prick them all over with a fork and place them in a baking dish or on a rimmed baking sheet. Bake them for 45 minutes or until they are fork tender. Allow the potatoes to cool for 5-10 minutes.
  2. In a small saucepan, bring the half & half (or cream) and bay leaves to a simmer on low heat. Simmer the milk for 5 minutes, do not boil or scald. Remove and discard the bay leaves.
  3. Cut each sweet potato in half and remove the meat. It should easily peel away from the skins. Place the meat into a large food processor. Add the half & half mixture, orange juice, brown sugar and Kosher salt to the blender and puree until it is smooth and lightens in color.
  4. Serve the potatoes immediately. Garnish or serve them with traditional mashed potato toppings like sour cream, butter, salt and pepper or scallions.

Notes

  • For a spicy version, add 1/2 teaspoon crushed red pepper flakes during blending.
  • Top with 1/2 cup cooked and crumbled chorizo sausage to add savory flavor and texture.
