Mashed Sweet Potatoes

Mashed Sweet Potatoes. These sweet, creamy potatoes are swirled with maple syrup and sprinkled with salt. The salty sweet flavor makes these the BEST side dish recipe!

Ingredients

  • 3 pounds sweet potato
  • 2 tablespoons butter unsalted
  • ¼ cup maple syrup additional for topping, real
  • ¼ cup milk
  • salt to taste

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper or aluminum foil. Spray with nonstick cooking spray.
  2. Lay 3 pounds sweet potatoes on the baking sheet and poke holes in the tops of them with a fork.
  3. Bake for 60 minutes, rotating the pan halfway through to ensure even baking. Test the potatoes with a fork to ensure they are full cooked and tender. Allow the potatoes to cool slightly for 5-10 minutes.
  4. Carefully remove the skin from the potatoes, which should peel off easily. Roughly chop the peeled potatoes before adding them to a large mixing bowl.
  5. Add 2 tablespoons unsalted butter and ¼ cup real maple syrup. Mash the potatoes with a masher while gradually adding ¼ cup milk until the potatoes reach your desired texure and creaminess. Add salt to taste.
  6. Drizzle with additional maple syrup if desired and serve warm.
