  • ¼ cup maple syrup
  • 1 teaspoon salt plus more for cooking the potatoes, sea salt
  • black pepper freshly ground
  • thyme optional, for garnish, fresh leaves

Instructions

  1. Place the sweet potatoes in a large pot and cover with cold water by 1 inch. Stir 1 tablespoon salt into the water.
  2. Bring to a boil over high heat, then reduce the heat to maintain a gentle boil. Cook for 10 to 15 minutes, or until the potatoes are easily pierced with a fork.
  3. Drain the potatoes and return to the pot. Add the butter, milk, maple syrup, salt, and several grinds of pepper. Use a potato masher to mash until smooth and well combined.
