Mast o Khiar - Persian Yogurt and Cucumber Dip

Mast o Khiar is a Persian dip of Greek yogurt blended with chopped cucumbers, dried mint, powdered rose petals, walnuts, and raisins. Salt and black pepper season the medley, creating a refreshing yet textured yogurt dip that balances the coolness of yogurt and cucumber with the warmth of nuts and dried fruit. It is typically served chilled with pita or flatbreads.

Description

Mast o Khiar combines plain Greek yogurt with chopped cucumbers, bringing crispness and moisture to the creamy base. The dried mint adds herbal notes, while powdered rose petals introduce a subtle floral aroma unique to Persian cuisine. Walnuts and raisins contribute contrasting textures and warmth, balancing the naturally cool ingredients.

The dip is finished with salt and pepper for seasoning and is stirred until well combined before chilling. Serving with pita chips, pita bread, naan, or lavash highlights the dip’s versatility and freshness.

Using seedless Persian or mini cucumbers prevents excess water, and squeezing grated cucumber reduces liquid if preferred. The yogurt can be full fat, low fat, or nonfat, and European-style yogurt may add tanginess.
