Matcha almond frangipane:

  • 1 egg large
  • 3 tablespoon granulated sugar
  • 2 teaspoon matcha powder
  • 1 ½ tablespoon butter softened at room temperature, salted
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract optional
  • ½ C almond flour

Croissants:

  • 2 Croissant day-old
  • 1-2 tablespoon simple syrup
  • 1-2 Tbsp almond flakes sliced

Garnish:

  • powdered sugar
  • matcha chocolate

Make the matcha almond frangipane:

  1. In a small bowl, whisk together the egg, sugar, matcha, butter, vanilla extract and almond extract.
  2. Add in the almond flour.
  3. Whisk until everything is incorporated.

Assemble:

  1. Preheat oven to 350°F/177°C.
  2. Use a sharp knife to cut the croissants in half equatorially.
  3. Brush the insides of the croissant with simple syrup.
  4. Divide the matcha frangipane and spread about half of the mixture onto each croissant, leaving a little remaining for the tops.
  5. Replace the croissant tops and spread the remaining matcha frangipane on top of the croissants.
  6. Scatter and press on sliced almonds.
  7. Place the croissants onto a baking sheet lined with parchment paper or aluminum foil.
  8. Bake at 350°F/177°C for 20-25 minutes, until lightly golden, covering with foil about half-way through the bake.
  9. Remove croissants from oven and let cool.
  10. Dust with powdered sugar and/or extra matcha and decorate with matcha chocolate (optional).
