Matcha Coconut Snowballs

Matcha Coconut Snowballs are bite-sized treats made from almond flour, shredded coconut, and matcha green tea powder, sweetened with maple syrup and coconut extract. They have a firm yet tender texture and are coated in finely shredded coconut for added texture and visual appeal. These no-bake snacks can be stored in the fridge and make a refreshing and mildly sweet option for a light dessert or snack.

Description

This recipe creates Matcha Coconut Snowballs by combining almond flour, shredded coconut, matcha powder, sweetener, and coconut extract with almond milk. The ingredients are pulsed in a food processor until they bind together into a moldable dough. The mixture is then shaped into small balls by hand and rolled in finely shredded coconut, which adds a delicate coating and mild coconut flavor.

The matcha powder brings an earthy green tea flavor and subtle bitterness that balances the sweetness from maple syrup. Almond flour gives a nutty base and slightly crumbly texture, while coconut adds chewiness. These snowballs require no cooking and can be chilled to firm up before serving.

This treat suits those looking for a handheld, portion-controlled snack or dessert with natural ingredients and a gentle caffeine lift from the matcha.

Ingredients

Servings

For coating:

  • ¼ C coconut unsweetened, fine shredded

For the snowballs:

  • ½ C almond flour
  • ½ C coconut unsweetened, shredded
  • 2 teaspoon matcha green tea powder
  • 2 tablespoon maple syrup or any liquid sweetener to taste
  • ½ teaspoon coconut extract or sub vanilla or almond extract
  • 2 tablespoon almond milk

Instructions

Coconut coating:

  1. Place fine shredded coconut into a small bowl and set aside. This will be for coating the balls. (Note: if the coconut flakes are large, place into a coffee grinder and pulse a few times, until light and powdery).

Make the matcha coconut snowballs:

  1. In a food processor, combine together the almond flour, shredded coconut, matcha, maple syrup, coconut extract, and almond milk.
  2. Pulse until the mixture comes together. (When the mixture is pressed together, it should hold its shape).
  3. Use a small ice cream scoop (or tablespoon) to form balls.
  4. Roll the mixture between your hands until it is a round sphere.
  5. Coat the entire exterior of the ball with the coconut flakes. Repeat with the remainder.
  6. Place the coated snowballs in a container and store in the fridge.
