Matcha Gummy Bears are made by heating water almost to a boil and dissolving gelatin, honey, and matcha green tea powder through vigorous stirring. The gelatin provides the gummy texture, while honey adds sweetness and matcha powder imparts a distinctive grassy, slightly bitter flavor unique to green tea. The blended liquid is carefully portioned into gummy bear molds placed on a baking sheet for stability.
After filling, the molds are refrigerated for at least 4 hours to allow the gelatin to fully set and firm up into chewy, bite-sized candies. The finished gummy bears combine a smooth, elastic texture with a strong matcha flavor balanced by the mild sweetness from honey. Once set, they should be stored in an airtight container in the refrigerator to maintain freshness and firmness.
Ingredients
- 1 Cup water
- 1 Tablespoon honey
- 2 1/2 Tablespoons gelatin
- 2 Tablespoons matcha green tea powder Encha brand
Instructions
- Heat water over medium-high heat, bringing it almost to a boil.
- Add honey, gelatin, and matcha.
- Stir vigorously for a few minutes until matcha and gelatin are both completely dissolved.
- Set three gummy bear molds on top of a baking sheet. Fill molds with an eyedropper, or evenly distribute the liquid between the molds, then use a small spatula to fill in all the cavities and scrape off the excess.
- Refrigerate for at least 4 hours, or until bears have set.
- Store leftovers in an airtight container in the refrigerator.
