  • 2 cups pancake mix complete
  • 1 1/2 cups of water
  • 1 cup cheddar cheese shredded
  • 1/4 cup maple syrup
  • 1 pound breakfast sausage

Instructions

  1. Preheat your oven to 400 degrees.
  2. In a medium frying pan over medium high heat brown and crumble your breakfast sausage.
  3. Once your sausage is cooked through, drain and set aside.
  4. To a large mixing bowl whisk together your pancake mix, water, cheese and syrup until well combined.
  5. Stir in the cooked sausage.
  6. Spoon your batter into mini muffin tins. I use silicone but if using metal either spray your mini muffin tin or line with paper liners.
  7. Bake at 400 degrees for 12-15 minutes until golden and cooked through.

Notes

  • Use spicy sausage to add heat to the bites.
  • Maple-flavored sausage enhances sweetness complementing the pancake and syrup.
  • Precooked sausage links can be chopped and used after warming instead of raw sausage.
  • Feel free to substitute cheddar with your preferred cheese for variety.
