Meal Prep Breakfast Sandwiches
Description
Meal Prep Breakfast Sandwiches consist of eggs baked in a muffin pan, combined with deli turkey and American cheese, all served on toasted English muffins spread with dijon mustard and light mayonnaise. The method includes baking eggs until just set for ease of use and forming a uniform shape. Toasting the English muffins and spreading condiments add texture and flavor contrast. The sandwiches are assembled by layering turkey, cheese, and egg between the muffin halves.
The eggs provide a stable protein base, while the turkey brings smoky notes and the cheese adds a creamy element. The dijon and mayo contribute tang and moisture, balancing the sandwich. As they are individually wrapped and frozen, these sandwiches are practical for batch preparation and convenient to reheat for breakfast throughout the week.
Quality in ingredients, especially the turkey and bread, plays an important role in the final taste. Using a silicone muffin pan helps prevent sticking during egg baking. The sandwiches can be kept frozen for up to a month or refrigerated for up to a week, allowing flexible meal planning.
Ingredients
- 12 egg large
- 12 English Muffin
- 2 lb. deli turkey good quality
- 12 lices American cheese
- Condiments of choice for serving I recommended 1-2 tsp each of dijon mustard and light mayo
Instructions
- Preheat the oven to 350 degrees F. Spray a muffin pan with cooking spray. I would recommend a silicone muffin pan to reduce sticking.
- Add eggs to muffin pan and sprinkle with salt and pepper. Bake for 15-20 minutes or until eggs are done. Let cool for 10 minutes.
- Cut English muffins in half. Spray with cooking spray and toast before assembling.
- Spread the dijon mustard on the bottom half and the mayo on the top. Layer bottom muffin with turkey, cheese, egg, and then top with other half of the muffin.
- Wrap each sandwich individually in tinfoil, wax paper, or parchment paper and place them in a freezer safe resealable bag. Remove as much air as possible to prevent freezer burn. Freeze for up to 1 month. Refrigerate for up to a week.
Notes
- For the best flavor, choose good quality deli turkey such as smoked varieties.
- Egg muffins can be baked in a silicone muffin pan to reduce sticking.
- Wrap and freeze sandwiches individually to keep freshness and prevent freezer burn.
- Refrigerate sandwiches if consuming within a week instead of freezing.
- Condiments like dijon mustard and light mayonnaise add moisture and flavor contrast.
