Meal Prep Cheeseburger Bowls

These Meal Prep Cheeseburger Bowls deconstruct the classic cheeseburger into a fresh bowl format with ground beef seasoned with steak seasoning, crisp romaine lettuce, shredded cheddar, tomatoes, onions, and bread and butter pickles. Stored separately until serving, they keep components fresh and allow for a last-minute toss with a special sauce, making them a practical option for make-ahead lunches or dinners.

Description

Meal Prep Cheeseburger Bowls feature cooked ground beef seasoned with steak seasoning paired with fresh chopped romaine, red onions, halved tomatoes, shredded reduced-fat cheddar cheese, and bread and butter pickles without added sugar. The recipe suggests keeping the beef and salad components separate, either in divided containers or in layers, to preserve freshness until ready to eat. Once assembled, these bowls are tossed with a specifically formulated Skinny Special Sauce, adding a creamy and tangy element that complements the savory meat and crisp vegetables.

The beef is browned in a skillet and portioned out for multiple servings while the fresh vegetables provide a crunchy, cold contrast. The combination avoids bread but preserves the flavors of a cheeseburger in a bowl format that is suitable for meal prep and storing in the refrigerator. The inclusion of pickles adds a vinegar note balancing the richness of beef and cheese.

Having components separated during storage helps prevent sogginess, with romaine lettuce maintaining crunch. This bowl is best served cold or at room temperature after tossing with the sauce. It offers a convenient, protein-rich meal option made in advance to fit into a busy schedule.

Use containers with separate compartments or keep beef and lettuce plain until ready to serve to maintain texture and freshness.Cheeseburger Bowls can be stored up to 5-6 days refrigerated.Extra cooked ground beef can be used for other recipes or fed to pets.

Ingredients

Servings

To make the Ground Beef:

  • 1 lb. ground beef 93% lean 7% fat
  • 1 Tbsp steak seasoning

To assemble the Bowl:

  • 4 cups romaine lettuce chopped, 170g
  • 1/3 cup ground beef cooked, 75g
  • 2 Tbsp cheddar cheese reduced-fat, shredded, 14g
  • 1/2 cup tomato halved - or cherry tomatoes, medley, 90g
  • 1/2 cup onion thinly sliced, red, 30g
  • 1 oz. Bread and butter pickles no sugar added, 28g
  • 2 Tbsp special sauce linked below, Skinny, 30g

Instructions

  1. In a large skillet, add beef and steak seasoning. Cook on medium heat until browned, breaking into pieces as you go. Remove from heat and set aside.
  2. Add shredded lettuce, cheese, red onions, tomatoes, and pickles to a to-go storage container.
  3. Add beef to the other side of the container or into another small container (you can also add beef to the bottom of the container and lettuce on top). Ground beef makes 4 servings total so you can assemble 4 bowls (with a little extra, that I just give to my dogs or use for another recipe).
  4. Store in the fridge until ready to eat, then toss with Skinny Special Sauce and enjoy!

Notes

  • Use containers with separate compartments or keep beef and lettuce plain until ready to serve to maintain texture and freshness.
  • Cheeseburger Bowls can be stored up to 5-6 days refrigerated.
