Meal Prep Chicken Burrito Bowls

Meal Prep Chicken Burrito Bowls are the perfect way to eat a healthy, delicious make-ahead meal on the go. Full of beans, rice, chicken, avocado, tomato, and all the toppings you want on a burrito, packed up together in an easy meal prep container.

Ingredients

Servings
  • 2 cups chicken fully cooked, make it yourself, or frozen chicken breast strips or rotisserie chicken work great, chopped or shredded
  • 1 yellow corn drained, see note, 15-ounce can
  • 1 black beans or pinto beasn, drained, 15-ounce can
  • 2 cups white rice cooked
  • 1 cup cheese shredded
  • salsa optional toppings
  • avocado
  • lime
  • cilantro
  • sour cream

Instructions

  1. Divide rice, beans, corn, and chicken between four meal prep containers.
  2. Sprinkle cheese over the top.
  3. Add any toppings in sauce containers with lids.
  4. To eat, remove any topping containers and heat burrito bowls in the microwave for about 1 minute, stir, and add toppings before serving OR you can eat them straight from the fridge, no heating required. Enjoy all week long!

Notes

  • To use grilled corn on the cob instead of canned: Preheat a grill or grill pan, rub corn all over with oil and season generously with salt and pepper. Cook for about 8-10 minutes, turning every couple of minutes to ensure even cooking, until corn kernels start to char a bit. Allow to cool for a few minutes before using a sharp knife to slice kernels off of the cob and distribute between the meal prep containers.
