The sweet potatoes are cubed small and roasted at high heat with olive oil, salt, and pepper until tender and slightly caramelized, providing a natural sweetness and soft texture that contrasts well with the savory beef topping.
The sloppy joe mixture begins by sautéing diced onions and green and red bell peppers in olive oil until softened. Ground lean beef is added and cooked until browned and crumbly. Garlic, ketchup, yellow mustard, Worcestershire sauce, salt, and pepper create a flavorful sauce base, gently simmered to blend the ingredients and thicken slightly.
The bowls are portioned into containers for convenient refrigerated meal prep, each receiving a quarter of the cooked sweet potatoes and sloppy joe meat. This offers a balanced combination of sweet and savory flavors, protein, and vegetable content in a ready-to-eat meal format suitable for lunches or dinners throughout the week.
Ingredients
Sweet Potatoes:
- 2 sweet potato cubed, small, 480g
- 3/4 Tbsp olive oil
- 1/2 tsp salt to taste
- 1/2 tsp black pepper to taste
Sloppy Joes:
- 3/4 Tbsp olive oil
- 1 onion finely diced, small, 120g
- 1 green bell pepper finely diced, 150g
- 1 red bell pepper finely diced, 150g
- 1 lb. ground beef I used 96/4, lean
- 2 cloves garlic minced
- 3/4 cup ketchup I used no sugar added, 180g
- 1 Tbsp yellow mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp salt or to taste
- 1/2 tsp black pepper or to taste
Instructions
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Add sweet potato cubes to the sheet pan and toss with olive oil, salt and pepper until sweet potatoes are evenly coated. Bake for about 30 minutes, tossing halfway through, or until roasted to liking. Remove from the oven and set aside.
- Meanwhile, in a large skillet, add the olive oil, onion, and both peppers. Cook for 5-6 minutes or until onions become soft.
- Add in the ground beef and cook until no longer pink, crumbling as you go. Drain some of the excess liquid if desired and stir in the rest of the ingredients.
- Reduce heat to low and let simmer for 5-10 minutes to allow the flavors to come together. Add more water if needed.
- To assemble, add 1/4 of the sloppy joe meat (219g) and 1/4 of the sweet potatoes (65g) to four glass containers. Store in the fridge for 5-6 days.
