Meatball Kale Soup Recipe
Description
This soup begins by sautéing diced onions and carrots in oil until softened, then adding water or broth and bringing it to a simmer. Ground turkey is seasoned with garlic parsley salt and mixed with an egg, then formed into small meatballs which are gently cooked in the simmering broth. Diced potatoes are added afterward to cook through while the meatballs finish cooking.
Fresh kale is added last to retain some texture and color in the soup. The combination results in a balanced broth with tender meatballs and a mix of vegetables, making a wholesome bowl that's warm and satisfying.

Ingredients
- 1 lb ground turkey
- 1 egg
- 1 tbsp garlic parsley salt
- 1 tbsp neutral cooking oil generic cooking oil
- 1/2 onion diced, medium
- 1 carrot chopped, medium
- 3 potato chopped, medium
- 1 bn kale chopped, fresh
- 7 cups water or chicken or beef broth
- 1 tbsp salt adjust to taste
- 1 tsp black pepper adjsut to taste
Instructions
- Prepare ingredients. Clean and dice potatoes into bite-sized pieces. Chop kale into one-inch long strips.
- Dice onion and carrot into similar sized pieces. Preheat oiled pot over medium-heat with olive oil. Sautee onions and carrots until they soften and the onions turn translucent.
- Add water or broth to the the pot. Bring to a simmer.
- Combine meat with egg and garlic salt.
- Form meatballs by rolling the meat mixture into a ball in the palm of your hand. Add one at a time to the boiling water. Let soup simmer for 15 minutes.
- Add diced potatoes to the simmering ingredients. Once they are fully cooked (about 15 minutes), add in the kale strips.
- Season to taste with salt and pepper. Serve soup while it is warm.
