Description
This recipe transforms cooked meatballs into amusing 'mummies' by threading them onto uncooked spaghetti strands, which help hold the meatballs together while wrapping with thin strips of pizza dough. The dough is stretched and crisscrossed to fully cover the meatballs but leaves spaces for eyes. After carefully removing the spaghetti, the wrapped meatballs are baked on a parchment-lined baking sheet at moderate heat until the dough browns and crisps. Brushing melted butter over the baked mummies adds shine and richness. Edible eyes are attached after baking to complete the Halloween-inspired look.
The baking process results in a crispy dough exterior offering a satisfying contrast to the soft, cooked meatballs inside. Served with warm pasta sauce on the side, each mummy can be dipped and enjoyed as a finger food or appetizer. The use of pre-made pizza dough simplifies prep, and frozen or homemade meatballs may be used.
Ingredients
- 1 roll pizza dough I used Pillsbury refrigerated pizza dough, prepared
- 18 meatball homemade or frozen & defrosted, cooked
- 6 trands spaghetti raw
- 12 edible eyeballs
- 1 tablespoon butter optional, melted
- pasta sauce for serving
Instructions
- Preheat oven to 350°F.
- Cut pizza dough into thin strips, approx. ¼″ wide.
- Thread 3 meatballs onto a strand of spaghetti (this just holds them in place). Begin wrapping dough around the meatballs stretching and criss-crossing until the meatballs are completely covered. Be sure to leave a little space open for the eyes.
- Gently remove the spaghetti strand and place the meatball mummy on a parchment lined pan.
- Bake 19-23 minutes or until browned. Remove from oven, brush with melted butter and add in edible eyeballs.
- Serve with warm pasta sauce.
