Meatball Soup

This hearty Meatball Soup features your favorite meatballs, loads of veggies, and pasta simmered in a tomato-y beef broth. Ready in just 30 minutes, it's quick, easy, and super filling. Perfect for busy weeknights!

Ingredients

  • 2 tablespoons olive oil
  • 1 onion chopped, small
  • 2 carrot peeled and chopped
  • 2 talks celery chopped
  • 1 1/2 cups green beans trimmed and cut in one inch segments
  • 1 teaspoon Italian seasoning dried
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 6 cups beef broth low sodium
  • 1 1/2 cups tomato sauce 1 1/2 ‐ 8 ounce cans
  • 15 ounces crushed tomatoes
  • 1 1/4 lbs meatballs fresh or frozen
  • 3/4 cup short pasta dry, such as ditalini
  • parsley chopped, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, celery,carrots and green beans.
  2. Cook the vegetables for 5‐6 minutes. Add the crushed tomatoes, tomato sauce, beef broth, Italian seasoning, garlic powder, onion powder, salt and pepper.
  3. Bring to a simmer. Add the meatballs and pasta to the soup. Simmer for 10 minutes, or until pasta and vegetables are tender.
  4. Top with parsley. Serve with parmesan cheese if desired.
