Meatball Soup
Description
Meatball Soup features meatballs cooked directly in a beef broth alongside diced tomatoes, Italian seasonings, small ditalini pasta, and mixed frozen vegetables. The onions and garlic are first sautéed to create a flavorful base before combining with the broth and meatballs. After simmering, the addition of pasta and vegetables provides chewiness and freshness to contrast the tender meatballs. Simmering the soup covered ensures the flavors meld and the pasta cooks through without drying out. The soup has a balanced texture of tender meat, soft pasta, and crisp-tender vegetables and delivers a straightforward, savory profile without added extras.
