Description

The recipe blends ground beef with eggs, breadcrumbs or oats, diced sweet onion, minced garlic or garlic powder, Dijon mustard, Worcestershire sauce, salt, pepper, and dried sage. Once combined gently to avoid toughening the meat, the mixture is shaped and placed in a loaf pan. It bakes first uncovered, then is coated with a sauce made from ketchup, brown sugar, Dijon mustard, and nutmeg before returning to the oven to finish cooking. This adds a glossy, flavorful crust.

After resting, the meatloaf is sliced for serving as a hearty main dish. The mixture and sauce provide a sweet and savory balance with aromatic spice notes from nutmeg and sage.

The meatloaf can be made and shaped a day or two ahead, refrigerated, then baked when desired. The sauce also stores well and can be prepared in advance. Ingredients

  • 2 lbs ground beef
  • 2 large egg
  • 4 Tablespoons ketchup
  • 2 Tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 4 cloves garlic , minced (or 1 1/2 teaspoons garlic powder)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon sage dried
  • 1/2 cup sweet onion , diced
  • 1/2 cup breadcrumbs , or oats

Meatloaf Sauce:

  • 1/2 cup ketchup
  • 6 Tablespoons light brown sugar
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a standard size loaf pan with cooking spray.
  2. Add all of the meatloaf ingredients to a large bowl and gently mix everything to combine (without over-working the meat). Add the meat mixture to a loaf pan and gently pat into an even layer.
  3. Bake for about 30 minutes. Meanwhile, make the meatloaf sauce by combining all ingredients in a bowl.
  4. Remove meatloaf from oven and spread sauce on top. Return to oven for 10-20 minutes or until cooked through (160 degrees F).
  5. Allow to rest for 10 minutes before slicing and serving.

  • Freeze cooked slices after flash freezing on a tray; reheat in microwave or oven as needed.
  • Lean ground beef or a ground turkey-beef mix can be used as substitutions.
  • If a loaf pan is unavailable, shape the loaf by hand on a baking sheet.
