Meatloaf

This Meatloaf recipe combines lean ground beef with finely chopped onion, garlic, panko breadcrumbs, and seasonings, blended with eggs and milk to bind. It is baked in a loaf pan and topped with a brown sugar and ketchup glaze that caramelizes during baking, creating a savory-sweet finish and moist interior.

Description

The meat mixture uses lean ground beef to balance moisture and fat content, mixed with onion, garlic, and Italian seasoning for flavor. Panko breadcrumbs and milk add tenderness, while ketchup and Worcestershire sauce contribute moisture and depth. The mixture is carefully combined to avoid overmixing, which keeps the texture from becoming dense.

Baked in a loaf pan, the meatloaf is partially cooked before topping with a sweet glaze made from ketchup, brown sugar, and Worcestershire sauce. This glaze forms a flavorful crust as it bakes further. Resting the meatloaf after baking allows the juices to redistribute, improving sliceability and juiciness.

The meatloaf pairs well with classic sides like mashed potatoes or steamed vegetables. Adjustments can be made to the glaze for variation, and fresh or powdered garlic and onion can be used depending on preference.

For best results, avoid overmixing the meat and cover with foil if the glaze starts to darken too much near the end of cooking. Choosing lean ground beef helps control fat and ensures a balanced texture.

Ingredients

Servings

For the Meatloaf:

  • 2 pounds ground beef (90/10) (900g)
  • 1 small onion finely chopped (174g/about 1 cup)
  • 3 garlic minced (about 1 tablespoon, cloves
  • 2 large egg lightly beaten
  • cup milk (80 mL)
  • ¾ cup panko breadcrumbs (55 g)
  • 2 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • teaspoons salt
  • ½ teaspoon black pepper ground

For the Sauce:

  • ¾ cup ketchup (198 g)
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

For the Meatloaf:

  1. Preheat the oven to 375°F. Grease a 9x5-inch loaf pan with cooking spray.
  2. In a large mixing bowl, stir together all of the meatloaf ingredients until evenly combined. Press into an even layer in the prepared pan. Place the pan on a small, rimmed baking sheet.
  3. Bake for 40 minutes.

For the Sauce:

  1. While the meatloaf is baking, in a small bowl, stir together all of the sauce ingredients until well combined.
  2. After 40 minutes, spread the sauce in an even layer over the meatloaf. Continue baking until a thermometer inserted into the center registers 160°F, 10 to 15 minutes more. Let rest for 10 minutes before slicing.

Notes

  • Combine ingredients gently to avoid a dense meatloaf texture.
  • Let the meatloaf rest for 10 minutes after baking to retain juices and support slicing.
  • Cover with foil in the final baking stage if the glaze browns too quickly.
  • Use lean ground beef to balance moisture without excess fat; drain if needed.
  • Finely chop or grate onions for a softer texture; larger pieces provide more crunch.
  • Fresh garlic and onion are recommended, but powdered versions can be substituted at one teaspoon each.
  • Modify the glaze by substituting ketchup with thick sweet BBQ sauce for variation.
