Description
This recipe builds flavorful meatballs by combining lean ground beef with finely diced yellow onions, Italian-style breadcrumbs, an egg, ketchup, soy sauce, Italian seasoning, salt, and black pepper. The onion is first sautéed for softness and sweetness, then mixed into the meat blend to add moisture and taste. The mixture is gently combined to maintain tenderness and shaped into 12 uniform balls placed in a sprayed muffin pan.
A sauce made from ketchup, soy sauce, brown sugar substitute (like Truvia), and garlic powder is spooned over the meatballs before baking at 350°F. This sauce caramelizes during baking, creating a sticky glaze that complements the savory meat inside. The meatballs bake for about 25 minutes until no longer pink in the center.
These meatloaf meatballs can be served with a variety of sides such as mashed or roasted potatoes, glazed carrots, Brussels sprouts, green beans, mac and cheese, rice, or yeast rolls, offering flexible meal options. Ingredients
Meatballs:
- 1 tsp olive oil
- 3/4 cup yellow onion finely diced, 85g
- 1.5 lb ground beef I used 96/4, lean
- 1/4 cup Italian breadcrumbs 28g
- 1 egg large
- 2 Tbsp ketchup sugar-free, 30g
- 1 Tbsp soy sauce low-sodium
- 1 tsp Italian seasoning each
- 1 tsp salt each
- 1/2 tsp black pepper
Sauce:
- 1/4 cup ketchup sugar-free, 60g
- 1 Tbsp soy sauce low-sodium
- 1 Tbsp brown sugar I used Truvia
- 1/2 tsp garlic powder
Instructions
- Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray and set aside.
- Heat olive oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until the onion is tender. Then remove from heat and set aside.
- In a large bowl, combine the beef, breadcrumbs, egg, ketchup, soy sauce and seasonings. Mix just until combined (don’t over mix). Then roll into 12 even sized balls (about 2 Tbsp/70g each). Place meatballs in the prepared muffin pan.
- Mix all the sauce ingredients in a small bowl then spoon over the meatballs. Smooth the top of each meatball evenly with the back of your spoon.
- Bake meatballs for 24-28 minutes (I did 25 minutes) or until no longer pink when cut through the center.

Notes
- Suggested sides include mashed, roasted, or sweet potatoes; glazed carrots; Brussels sprouts; green beans; mac and cheese; rice; or yeast rolls for a complete meal.
- Do not overmix the meatball mixture to avoid tough texture; mix just until combined.
- Use a muffin tin for uniform size and easier portioning when baking the meatballs.
